BBQ hoki kebabs

These BBQ hoki kebabs are perfect for entertaining guests. Cook the skewers and serve on a large platter with a drizzle of olive oil and a sprinkle of dukkah.
INGREDIENTS
1 pkt Sealord Simply Natural Hoki Fillets, defrosted
8 wooden skewers
Sea salt and pepper
Lime aioli
2 red capsicum, seeded and sliced
1 eggplant, sliced
4 courgettes
1 red onion, sliced
Olive oil
Dukkah
METHOD
1. Cut the hoki into cube’s and thread on the skewers.
2. Season with salt and pepper.
3. BBQ the kebabs and vegetables and season as desired.
4. Place the cooked vegetables on a large platter and drizzle with olive oil and sprinkle with dukkah.
5. Place the kebabs on top of the vegetables and drizzle with lime aioli.
