Salad nicoise
INGREDIENTS
1 iceburg lettuce
4 ripe tomatoes, cut into wedges
1/2 cup black olives
8 small potatoes, cooked in skin
12 runner beans, trimmed and blanched
425g tin tuna in springwater, drained
4 hard-boiled eggs, quartered
Dressing:
2 tablespoons white vinegar
1 tablespoon olive oil
1 teaspoon wholegrain mustard
1 egg white
METHOD
Wash lettuce and tear leaves into bit-size pieces.
Place lettuce leaves in a large bowl and arrange all other salad ingredients on top.
Mix dressing ingredients together in a small bowl until combined.
Drizzle dressing over salad.
