Nutty meat kebabs
INGREDIENTS
8 wooden kebab skewers
2 tablespoons peanut butter
1 clove garlic, crushed
2 tablespoons soy sauce
1 lemon, juiced
300g lean diced lamb or beef
4 tomatoes, cut into wedges
2 onions, pealed and cut into wedges
1 green capsicum, cut into small chunks
METHOD
Soak the skewers in cold water for 20 minutes.
Mix peanut butter, garlic, soy sauce and lemon juice, add the meat and mix well.
Marinate for one hour in the refrigerator.
Thread meat onto skewers alternately with vegetable pieces.
Cook under the grill, or on a BBQ hot plate or fry pan, rotating until cooked through.
Serve with rice and salad.
