Fish medallions with orange sauce

Fish medallions with orange sauce
INGREDIENTS

8 whiting fillets
1 head broccoli, cut into 8 florets
1 cup orange juice
Zest of 1 orange
2 teaspoons cornflour
Cracked black pepper

METHOD


Wrap fish fillets around broccoli florets and secure with a toothpick or kitchen string.

Place fish in steamer, cover and cook for about 10 minutes until fish and broccoli are just cooked.

While the fish is cooking, combine orange zest, juice and cornflour in a small saucepan. Bring to the boil and simmer until thick. Add black pepper and remove from heat.

Divide sauce between 4 dinner plates, remove toothpicks/string from fish and place two fish medallions on each plate. Serve with jacket potatoes and salad.
