Chloe's tuna mornay

Serving size: Serves 4

INGREDIENTS

1 tablespoon butter or margarine
1 tablespoon flour
2 cups skim milk, warmed
1 small onion, grated
1 small potato, grated
375g tin of tuna
1 small tin of corn, drained
1 tin of asparagus cuts and tips, drained
salt and pepper, to taste
1 handful tasty cheese, grated
2 hard boiled eggs, diced
cooked pasta or rice to serve

METHOD

In a large saucepan, melt the butter, add the flour and mix well. Gradually add warm milk in small batches — the mixture will thicken slightly. Once you have added all of the milk, add the onion and potato and simmer for 5 minutes.

Add the tuna (including the juice from the can), corn and asparagus. Season with salt and pepper, to taste. Simmer for 5-8 mintues, stirring regularly.

Before serving stir in grated cheese and egg.

Serve over pasta or rice.
