Tropical cake

Tropical cake
INGREDIENTS

4440g tin tropical fruit salad (do not drain)
125g butter
½ cup sugar
2 eggs (slightly beaten)
2 cups self-raising flour.

METHOD

Heat fan forced oven at 180 degrees.


Grease a large loaf tin and line base with baking paper.


Put fruit salad, butter and eggs into saucepan and bring to boil.


Boil for 3 minutes, remove from heat and allow to cool.


When cool, add slightly beaten eggs and sifted flour, mix well and pour into prepared loaf pan.


Bake for 40 minutes or until cooked (when tested).


Leave in tin for 5 minutes before removing to cool on a cake cooler.

I think this recipe is incorrect as the eggs are used twice. once when boiling the fruit and again when fruit is cooled add with the flour. I think the eggs should not be added with fruit and boiled. also the size of the tin of fruit is not correct 440gr instead of 4440gr. sounds like a good cake otherwise
