Try this delicious and quick fruit cake recipe.
INGREDIENTS

1 kg mixed fruit (include chopped dates, prunes, dried apricots and cranberries) 600 mls chocolate milk
2 cups of self raising flour
1 tsp mixed spice


METHOD

Line an 8" round cake tin with baking paper and spray with cooking spray.

Set oven to 160 degrees (fan forced).

Soak fruit in milk overnight.

Add sifted flour and spice to fruit that has been soaked overnight and mix well.

Spread evenly into tin and smooth top, decorate with almonds if liked.

Bake in oven for 1 hour 15 mins.

Remove from oven and brush top with sherry and allow to cool in tin.
