Rainbow delight

INGREDIENTS

2 eggs
125g butter
1 cup sugar
2 cups self raising flour
2/3 cups milk
1 teaspoon vanilla essence
Food dye (4 colours)

METHOD

Preheat the oven to 180 deg C fan forced. Grease cake tin and line with baking paper.

Combine all dry ingredients and stir in a small bowl. Add the softened butter and the rest of the other liquid ingredients. Beat using electric mixer starting on low speed to combine. Then beat on high speed for 3 minutes.

Divide mixture into 4 even bowls and colour (e.g. pink, blue, green and yellow). After food dye is combined with the cake mixture, spoon in coloured mixture into cake tin, each colour in different corners, use a scewer or knife to mix these colours. Put into oven for approximately 30-35 mins.

Tip: Don’t over mix colours once they’re in the tin otherwise it will go a brownish colour.
