Asian rice noodles

Serving size: Serves 4

Cooking time: Less than 15 minutes
Course: Main, Side dish

Nice served with lamb cutlets or steak medallions cooked to taste.
INGREDIENTS

1 450g packet of fresh rice noodles, softened as per instructions.
1 tablespoon oil
1 ½ large red chillies, chopped finely
1 ½ tablespoons grated ginger
1 ½ tablespoons crushed garlic
2 tablespoons soy sauce
2 tablespoons Indonesian sweet soy sauce (kecap manis)
2 cups chicken stock
1-2 bunches bok choy
1 cup snow peas


METHOD

Heat oil in wok.

Add chillies, ginger and garlic, cook approximately one minute.

Add noodles, bok choy and snow peas.

Continually add chicken stock to keep pan from drying out. Cook until bok choy is wilted.

Add soy sauce and kecap manis. Cook a further minute.
