Atlantic salmon with herb crust

INGREDIENTS
2 150g Atlantic salmon
1/3 cup stale white bread crumbs
1 tablespoon lemon juice
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh chives
1 clove garlic, crushed
METHOD
Cook fish, skin side up, under hot grill for 5 minutes, turn.
Sprinkle with combined breadcrumbs, juice, herbs, and garlic; cook for about 5 minutes or until cooked through and lightly browned.
Serve with tossed salad, if desired.
