Green beans with garlic and parsley
INGREDIENTS

750g green beans, topped
2 tablespoons unsalted butter
1 tablespoon extra virgin olive oil
2 large cloves garlic, finely chopped
¼ cup chopped flat-leaf parsley
2 teaspoons coarsely grated lemon zest

METHOD

Plunge beans into a large pot of salted, boiling water and cook for about 4 minutes. Drain and run under cold water. Drain again.

Combine butter and oil in a frying pan and heat until the butter has melted. Add garlic and stir for 1 minute. Add beans and sauté for about 5 minutes, until heated through. Stir in parsley and lemon zest and season to taste.
