Hot barbecue sauce
INGREDIENTS

1 tablespoon vegetable oil
½ small onion, finely chopped
¼-½ teaspoons chilli flakes
2 large cloves garlic, finely chopped
1 cup canned diced tomatoes
½ cup (125ml) red wine vinegar
1/3 cup (60g) brown sugar
1/3 cup (80ml) Worcestershire sauce
2 tablespoons orange juice, plus 1 teaspoon finely grated orange zest
1 teaspoon chopped thyme leaves
barbecued sausages, to serve

METHOD

Combine oil, onion and chilli flakes in a pan.

Cook over moderate heat about 5 minutes, or until onion softens, stirring frequently.

Add remaining ingredients, and simmer about 20 minutes, or until thick and fragrant, stirring frequently.

Season with salt. Serve with sausages, pork or chicken.

Makes about 1 cup of sauce.
