Fish with cucumber tomato salsa

INGREDIENTS
4 150g boneless fish fillets
cooking oil spray
Cucumber tomato salsa:
2 medium tomatoes, peeled, seeded, chopped
½ small Spanish onion, chopped
½ small Lebanese cucumber, finely chopped
1 tablespoon drained chopped capers
½ cup chopped continental parsley
1 tablespoon lemon juice
salt and pepper to taste
METHOD
Combine all salsa ingredients in a small bowl; mix well.
Add fish to a heated, non-stick pan sprayed with cooking oil; cook until browned on both sides and tender.
Serve fish with cucumber tomato salsa.
