Beetroot tzatziki with grilled chicken

INGREDIENTS
1 teaspoon oil
4 x 125g chicken breast fillets
Beetroot tzatziki:
200g cooked fresh beetroot, chopped
1 cup low fat plain yoghurt
2 teaspoons oil
2 tablespoons chopped fresh mint
1 clove garlic, crushed
1 tablespoon lemon juice
salt and pepper to taste
METHOD
Beetroot tzatziki:
Combine all ingredients in a blender; process until smooth. Transfer to a bowl. Cover; refrigerate several hours.
Heat oil in a non-stick pan; add chicken, cook on both sides, until browned and cooked through.
Serve chicken with beetroot tzatziki.
