Sparkling wine with berries

Sparkling wine with berries
INGREDIENTS

250g frozen strawberries
250g frozen raspberries
2 tablespoons caster sugar
1 cinnamon stick
4 tablespoons framboise or brandy
700ml sparkling dry white wine, chilled
Mint sprigs, to serve

METHOD

1. Defrost strawberries for 10 minutes. Slice and place in a large jug or bowl with raspberries.

2. Sprinkle with sugar and toss gently to combine. Bury cinnamon stick into berries and cover with cling film. Leave to macerate at room temperature for 30 minutes, until sugar dissolves.

3. Stir in framboise, then cover again with cling film. Chill until ready to serve.

4. Purée berries in a food processor and place in a serving jug. Spoon 1-2 tablespoons into a wine glass and fill with sparkling wine. Top each drink with a mint sprig and serve.
