Quick berry jam

Quick berry jam
INGREDIENTS

2 x 300g packets Creative Gourmet frozen berries (blackberries or raspberries)
4 tablespoons lemon juice
3 cups (550g) sugar

Makes 3 x 250g jars. (25 serves)

METHOD

1. Place frozen berries in a large microwave-safe bowl with juice. Cook on high (1200 watts/100%) for 5 minutes. Stir in sugar and cook for another 15-20 minutes, stirring after 5 minutes to ensure sugar is dissolved. A gel should form when tested on a cold saucer.

2. Ladle into hot, sterilised jars and seal with lids. Label and store in a cool, dark place.

Tip 1: A large bowl is essential to prevent the jam boiling over in microwave.

Tip 2: Jam will keep for several weeks or longer in refrigerator.
