Asparagus soldiers
INGREDIENTS
Serves 4
Prep time 5 minutes
Cooking time 6 minutes
1 bunch thick asparagus (see tip)
4 eggs
freshly ground pepper, to serve
METHOD
1. Snap off tough ends of asparagus. Plunge asparagus into a saucepan of boiling water and cook for 2-4 minutes, until bright green. Drain and place on a paper towel.
2. Meanwhile soft-boil eggs. Serve asparagus with eggs in cups and season with freshly ground black pepper.
Tips: White asparagus can also be used.
