Bircher muesli with berries
INGREDIENTS
Serves 4
Standing time 1 hour
Prep time 10 minutes
2 cups (180g) rolled oats
1 cup (250ml) apple juice
1 cup coarsely grated apple
1/2 cup (140g) natural low-fat yogurt
juice of 1/2 lemon
1 cup mixed berries (see tip)
1 tablespoon honey
METHOD
1. Place the oats and apple juice in a bowl and soak for 1 hour or overnight. Stir through grated apple, yogurt and lemon juice just before serving.
2. Spoon into serving bowls and top with mixed berries and honey.
Tips: Strawberries, blueberries and raspberries are a delicious mix.
