Braised potatoes (Patate en Tegame)

Braised potatoes
INGREDIENTS
2 tablespoons olive oil
1.5kg desiree potatoes, peeled, cut into wedges
1 tablespoon tomato paste
METHOD
1. Heat oil in a large frying pan on medium. Add potato and cook, tossing pan occasionally, for about 10 minutes, until pale golden.
2. Combine tomato paste with ¾ cup water and add to potato. Season to taste. Cover and simmer for 5-10 minutes, until tender. Transfer to a bowl and serve with lamb.
