Spinach with garlic and lemon
INGREDIENTS
2 tablespoons olive oil
2 garlic cloves, finely chopped
1kg english spinach, well washed, trimmed
Juice of ½ lemon
METHOD
1. Heat oil and garlic in a large frying pan on medium. Add spinach and cook for 5 minutes, until just wilted. Remove from heat, sprinkle with lemon juice and season to taste. Toss well before serving.
