Minced beef in lettuce cups

INGREDIENTS
1 tablespoon vegetable oil
2 green onions (shallots), chopped
2 tablespoons finely chopped lemongrass
500g lean minced beef (see tip)
2 tablespoons fish sauce
2 tablespoons sesame seeds
1 tablespoon sugar
freshly ground black pepper
4 large iceberg lettuce leaves, trimmed
coriander leaves, to serve
METHOD
Heat oil in a frying pan or wok on high. Sauté green onions for 1 minute. Add lemongrass and mince. Cook for 5 minutes, breaking up any lumps with a spoon, until browned.
Add fish sauce, sesame seeds, sugar and season with pepper. Cook for another 5 minutes, until liquid evaporates and mixture becomes quite dry. Place a lettuce cup in each bowl and fill with minced beef. Top with coriander leaves and serve with green tea.
Tip: if you have a food processor you may prefer to mince the beef yourself. Use cubed steak and take care not to over-pulse.
