Italian-style tuna with peas

Italian-Style tuna with peas
INGREDIENTS

2 tablespoons olive oil
1 garlic clove, crushed
1 small onion, finely chopped
4 small (about 700g) tuna steaks
¼ cup (60ml) dry white wine
1 tablespoon tomato paste
1½ cups (180g) frozen peas

METHOD

Heat oil in a large frying pan on medium. Cook garlic and onion for 5 minutes, until softened. Remove and set aside. Add tuna steaks to same pan and brown for 1 minute on each side. Return onion and garlic to pan with wine and tomato paste. Stir and season to taste.

Reduce heat to low, cover and simmer gently for 3 minutes. Stir through peas, until heated through. Serve immediately.




Tip: to chop an onion, peel and slice it in half then cut lengthways at 5mm intervals, taking care not to cut through to the end. Cut in the opposite direction to create small dice. Cooking the onion in wine will soften its flavour in the dish.
