Chicken burgers with roast tomato and spinach

Chicken burgers with roast tomato and spinach
INGREDIENTS

4 roma tomatoes, halved
¼ cup (60ml) olive oil
500g chicken mince
1 cup (70g) fresh breadcrumbs
2 tablespoons chopped coriander
3 green onions (shallots), finely chopped
4 bread rolls, halved
¼ cup (75g) mayonnaise
100g baby spinach leaves

METHOD

Preheat oven to 160°C. Place tomatoes on a baking tray. Drizzle over 1 tablespoon of olive oil, season, bake for 15 minutes.

Meanwhile, combine chicken mince with breadcrumbs, coriander and green onion in a bowl. Season to taste and shape into patties.

Heat remaining oil in a large frying pan on medium. Cook chicken patties for 3-4 minutes each side, until golden and cooked through.

Spread base of each roll with mayonnaise. Top with spinach leaves, patties, tomato halves and mayonnaise. Finish with other half of roll. Serve.

To make this great meal even more diabetic friendly, try using grain rolls or a good quality grain bread (min 15% grain content). This will increase the fibre and lower the G.I.
This recipe was the best!! I made this for my mum coz she is diabetic, and everyone loved it, even the kids!! I have made this recipe a few times and its great every time. I put rosemary, basil and the olive oil on the tomatoes and then put them in the oven, and they even tasted nice in just toasted bread when i didnt have rolls. GREAT RECIPE!!
