Beef and zucchini patties

INGREDIENTS
250g zucchini, coarsely grated
500g beef mince
1 small onion, grated
2 tablespoons chopped dill
60g cream cheese
2 eggs, lightly beaten
2 tablespoons plain flour
2 tablespoons rice bran oil
mashed potato, lemon wedges, to serve
METHOD
Pat zucchini with paper towel to remove excess moisture. Combine with mince,
onion, dill, cream cheese, egg and flour in a bowl. Season and form into 12 patties.
Heat oil in a frying pan on medium and cook patties for 4 minutes each side, until golden and cooked through. Serve with mashed potato and lemon wedges.
