Mango Bellini
INGREDIENTS

2 tablespoons pureed frozen mango cheek
1 teaspoon Mango Midori or peach schnapps
½ teaspoon lemon juice
dry sparkling white wine, chilled
1 teaspoon mango nectar (optional)

METHOD

1. Place mango, Midori and lemon juice in a chilled champagne glass. Fill almost to top with sparkling wine. Finish with a teaspoon of mango nectar, if you like.

Tip 1: To counteract the sweetness of the mango, choose a dry sparkling white wine, such as Croser, Jansz, or Domaine Chandon.

Tip 1: Puree the mango in a food processor or blender.
