Coriander salsa sandwiches
INGREDIENTS
8 slices wholemeal bread
2 tablespoons soft butter
2 tomatoes, sliced
½ small red onion, thinly sliced
1 lebanese cucumber, sliced
1 carrot, grated
Coriander salsa
1 bunch coriander, washed, chopped
2 tablespoons chopped mint leaves
2 teaspoons grated ginger
1 small green chilli, seeded
1 tablespoon lemon juice
METHOD
1. To make Coriander Salsa, combine all ingredients in a food processor. Process until smooth, adding a little water, if necessary.
2. Spread bread with butter. Spread half of Coriander Salsa over four slices and top with tomato, onion and cucumber. Top with remaining salsa, grated carrot and bread slices. Cut and serve.
