Matt Moran's butter chicken
INGREDIENTS

2 brown onions, finely diced
1 red chilli, chopped
2 garlic cloves, chopped
30 g ginger, approx 1 knob
4 teaspoons paprika
5 g ground cumin
1 teaspoon turmeric
2 curry leaves
2 tins whole plum tomatoes
1 litre cream
300 ml coconut cream
2 kg chicken thighs, bone removed and diced
250 g girgar butter

METHOD

To prepare the butter chicken, sweat off the onion, chilli, garlic, and ginger, add all the spices and the curry leaves and cook for 5 minutes. Then add the plum tomatoes and reduce down for approximately 10 minutes. Be careful not to burn it!

Then add the cream and reduce for a further 10 minutes. Add the coconut cream, the diced chicken, butter and season to taste. Cook for a further 10 minutes and serve with some rice or naan bread.

This recipe was featured in episode 1 of Channel 9's new series of The Chopping Block, airing Tuesday evenings at 7.30pm.

I was looking for a butter chicken recipe but when I saw this one I decided there was no way I was going to try it. Disgusting! All that cream and plum tomatoes YUK. Has he got shares in a dairy perhaps? I wouldn't employ him as a chef either!
What a pathetic list of ingredients for Butter Chicken - this guy has not got one clue about Indian food - either home cooking or restaurant food - stick to BBQ food mate. Serve this up in one of your restaurants and you would be out of business within a week.
For a fact " not all curries need to have curry leaves in them". Probably the chef that matt talks about is a crook. I'm more than willing to give matt an insight into Real Indian Cuisine.
what kind of butter chicken is this? there is no garam masala in it... u dont need 1 litre of cream .300g is more than enough if using 250gm of butter. and u need tomato puree and onion paste with ginger and garlic for gravy . canned tomato and chopped onions will not do the job.. coconut cream and curry leave...... well FYI north indian foods ( punjabi) don't use these specially coconut cream.
This is the worst butter chicken recipe I have come accross. This is a mild North Indian dish and you don't add curry leaves Chicken should be marinated and roasted before adding to the Gravy. What is girgar butter? If you are adding One litre cream you don't need this much butter around hundred gram butter is more than enough. You use tomato puree not can tomatoes for the dish. Onions and ginger is made into a paste not chopped. Coconut cream is not added to the butter chicken
