Poached Cinnamon Apricots
INGREDIENTS
3 cups water
2 cups caster sugar
3 cinnamon quills
6 cloves
½ sweet white wine
12 medium apricots
METHOD
Put the water, sugar, cinnamon, cloves and wine into a suitable saucepan bring to the boil and reduce to a simmer.
Spoon the apricots into the simmering liquid carefully cook for 5 minutes and remove from the heat. Cool in the cooking liquid and refrigerate until ready to use.
Lift apricots out of liquid with a slotted spoon and drain cut in half to remove the stone peel if desired and serve with whipped cream and sprinkle with cocoa powder.
